Weekly Menu Options

Weekly Menu Options for our busy, gluten-free family. This is a realistic type of shelf-cooking (and freezer cooking) that has worked for me over the years. In August, I did a huge round of freezer cooking. I was heading back to a semester of grad courses and needed to have meal options prepared so I didn’t stress out. We do not eat out often and I don’t typically buy junk food or ‘quick meal’ type things.
However, the start of the year brought on some changes to my life and my family’s life. Here is a modified list of what we will be eating this week. If I don’t have the recipe saved on my blog, you are welcome to email me at barefootfaithjourney@gmail.com or leave a comment requesting the recipe.
Monday
Pizza (B makes our pizza, one child has a Jack’s pizza, and for the other child we buy gluten free pizza crusts and make a pizza. This is the best crust we have bought to adapt to his needs.
Tuesday
Spaghetti with french bread (this is all gluten-free)
Wednesday
It’s date night! B and I will be doing date night every other week. We have childcare and honestly, if you are married, make your marriage a priority! At the end of the day, your kids will be gone…take time for each other.
I am so not going to enjoy this, but my child will be making Hamburger Helper (gag). This child is learning how to cook and we are starting simple. Hamburger helper is not my jam but this was a request. The other child will have gluten-free tortilla sandwich wraps, fruit, and popcorn

Beef and Broccoli Stir-fry with Rice
Sunday
I don’t cook, so it is a whatever you can grab or leftovers.
Notes
This is always subject to change. If my kids come over and want something different, I will make it. There are times when I’m exhausted and we need to order pizza and that is okay! I like to have a general idea of what to set out because it helps me to feel like I’m accomplishing something.
