Minestrone Soup

Minestrone Soup is one that Big Daddy loves, but I am not fond of, sadly.  I made it anyway cause I love him like that!

4 c. vegetable broth (vegetarian)

2 cans stewed tomatoes

kidney beans, 1 can

zucchini, cubed

1 potato, large, cubed

onion, chopped

2 celery stalks, chopped

3 c. corn

2 cloves garlic, minced

1 head of cabbage, finely chopped (I put through the food processor)

pasta, around 1 c.


2 T. Italian Seasoning

Mix all together in a large pot (minus the pasta).  Bring to a boil and then reduce heat, cover and simmer until the vegetables are all tender.  In the last 15 minutes, add the pasta.
