Easy Base Gluten Free Recipes and Seasoning Mix

These Easy Base Gluten Free Recipes and Seasoning Mix are staples I use at my house. The seasoning mix, I have used for at least nine hundred years. The base recipes are new-ish to me but I have been using them for several months now. You can buy cream of mushroom and cream of chicken soup that is in a can and gluten free. However, they are expensive. You can probably buy the taco mix in a jar and that may be gluten free, but I’m not 100% sure, so I just made my own. It is just easier that way.

Seasoning Mix

1 c. kosher salt

1/2 c. garlic powder

1/2 c. onion powder

1/8 c. pepper

Glass mason jar and the top of a parmesan cheese can.

I place each of the items above in layers in the glass mason jar. From there, I usually have enough room to at least double it. I use this mixture for absolutely everything, so I just layer away. Once the jar is full, screw on the lid and shake to incorporate.

Cream of …. (mushroom, chicken, or celery) Soup

1 c. powdered milk

1 c. rice powder (I tried to make this and it didn’t turn out very well, so I will buy it from now on)

2 Tbsp minced onion

Dash pepper

Dash salt

3 Tbsp chicken bouillon powder

Mix well and place in airtight container. This is the base for the mushroom, chicken, and celery soups.

Cream of Chicken: In pan, combine 4 Tbsp of the base and 1/4 c. water. Add in 1 c. chicken stock and cook stirring constantly.

Cream of Mushroom: In pan, combine 4 Tbsp of the base, 1/4 c. water. Add in 1 c. chicken stock and stir until thick. From there, either add 1 small can of mushrooms or fresh mushrooms.

Cream of Celery: In pan, combine 4 Tbsp of the base, 1/4 c. water. Add in 1 c. chicken stock and stir until thick. From there, add in chopped celery.

Gluten Free Taco Seasoning

2 Tbsp cumin

1 Tbsp onion powder

 Garlic powder, 1 Tbsp

1 Tbsp paprika

1/2 Tbsp chili powder

1 Tbsp oregano

Dash of salt

Depending on what I’m going to store this in, I will double or triple this recipe. Place in an airtight container and season to taste. I rarely measure anything. Remember, start small, taste, and add. You can always add seasoning in but you can’t take it out!

Gluten Free Ranch Mix

Parsley, 1 Tbsp

1  garlic powder

1 Tbsp onion powder

Dash of salt

Dash of pepper

Mix all together (again doubling or tripling depending on what you put it in). 2 Tbsp of this mixture equals one packet.

Here is a simple Mexican Casserole that my family enjoys.  There is SO MUCH MORE than you can add (ie fresh ingredients) that would be yummy.

I will add, down at the bottom, would I do when food is more readily available.  For now, you do what you have to do to feed the people in your house!

Be safe.  Stay in.  Wash your hands!

Ingredients

2# ground beef

Seasoning

Chili powder

2 cans Rotel tomatoes and chilis

1 can cream of mushroom

1 can cream of chicken

Onion

Garlic

Colby/Jack Cheese

Fritos (chili cheese Fritos would be spectacular in this recipe)

Directions

Brown ground beef, onion, garlic, and seasoning.  Once cooked, drain if necessary.  Next, add chili powder.  Then add in soups and tomato/chilis with the liquid.  Stir well.

In greased 13×9 dish, layer crushed up tortilla chips, meat, cheese.  Repeat until all ingredients are used up.  End with cheese.  Bake at 350 for about 30 minutes.

Additions

Cut up some fresh peppers and saute with onion, garlic, and beef.  You can also add in kidney beans, black beans, corn, cooked rice.  Ooh, or you could add a layer of rice so do chips, meat, rice, cheese.  That’d be good.  You could also a layer of refried beans!  Oh man, add in a can of nacho cheddar cheese soup.  Good grief.  So many options!

Chicken and Rice Soup (Instant Pot)

Chicken and Rice Soup (Instant Pot) is one of my newest creations. Simple and easy clean-up! This is an all-in-one soup that I cook all year round.

Chicken and Rice Soup (Instant Pot)

1 carton of gluten-free chicken broth

Minced onions

2 cans of chicken, drained

Seasoning

Oregano

Italian Seasoning

4 c. cooked rice

1/2 c. sour cream

Cream of chicken soup

1 c. milk

2 c. cheddar cheese soup

Instructions

Place all ingredients except the sour cream, milk, and cheddar cheese in an instant pot. Please note that any recipe (for an Instant Pot) that calls for milk products should be added AFTER the soup is done cooking. If you add it before, it can lead to explosions (experience) and curdling (experience).

Once the pressure is released, the soup is super hot, so there is no problem with melting the cheese. Add all dairy ingredients, including cream, 1/2 and 1/2, sour cream, cream cheese, cheese, etc.

Turn on soup mode and let run until done. My rice was not entirely done enough, so I stirred it up well and put it on manual for another 10 minutes.

Once done, add the milk, sour cream, and cheddar. Stir until it is all melded well.
