Mozzarella Crust

**This Mozzarella Crust recipe will make the heavens will part and Jesus will ask for a piece.  I will definitely be making this recipe again in the future!**

5 c. mozzarella

5 eggs

1 T. Oregano

1 T. Basil

1 T. Parsley

Mix all together. Place on greased cookie sheet. Bake at 450 for about 15-20 minutes.

Toppings

You can top this “pizza crust” recipe with anything. Another easy recipe option is to slice it up for cheesy bread to serve with another dish. Dip it in a low/no carb pizza sauce, and dangit girl, and it is super good. If you were wild, you could create your pizza sauce recipe. If you do that, you can control the sugar/salt aspect that you can’t control in a processed can of sauce. Was that the longest sentence in history ever? Felt like it. I digress.

This is something I am going to make for a side dish and cut it up as cheese sticks to serve with other meals. I typically use garlic bread, but this is a no-carb alternative that will work just as well.

In this Healthy Loaded Baked Potato and Chicken, I used chicken breasts.  Honestly, I think I like thighs better.  I may try that next time to see if there is a difference in taste.

1 lb. chicken

(I put my chicken in the crockpot with water and seasoning.  I save the broth, and I put it in a Tupperware container.  The next day, I skim the fat off of it, and I freeze the good stuff in a bag)

Seasoning

4 Potatoes (with skin because the skin is where your goodness is)

1 T. paprika

2 T. garlic powder

6 T. hot sauce

2 c. cheddar

2 T. oil (olive oil or coconut oil is best)

1 c. bacon (I put this on a broiler pan, so all the grease drips off of it)

1 c. green onion (optional for us because Big Daddy doesn’t like too many)

  I add my cut-up potatoes, seasoning, paprika, oil, garlic, and hot sauce in a separate dish.  I stir that up to ensure all the potatoes are covered, then I scoop the potatoes into a baking dish, and I bake at 450 for about 40 minutes (or until tender).

There will still be reserved liquid in the bowl.  Leave that.

Add chicken to that reserved liquid and stir to coat.

Once the potatoes are done, add the cooked chicken and your toppings of bacon, cheddar, and green onions.

Bake for another 15 minutes or so (covered).

Healthy Beef Stew Crockpot

**This Healthy Beef Stew Crockpot is terrific.  I wish you could smell my house.  It smells WONDERFUL**  I have used round steak, chopped up, leftover roast, or stew meat in this recipe.  They all taste great.  It smells like home.  Make some homemade biscuits and gracious.  This is a meal!

It reminds me of being at my Aunt Bettye’s house when I was younger.  I loved the smells that came out of her kitchen.  That and the chaos of all us cousins playing.  The grown-ups doing grown-up things!  LOL.

Now, I’m the grown-up.  That’s a scary thought.

Ingredients

1 lb stew meat

1/3 c. all-purpose flour + 2 T.

Seasoning

6 cloves garlic, finely chopped

bay leaves, 2

2 tsp. paprika

Worcestershire, 2 tsp.

2 onions, chopped

4 potatoes, chopped

2 celery stalks, chopped

3 carrots, chopped

4 beef bouillon

4 c. water

1 lb. squash, chopped

Directions

Put beef in crockpot.  Mix the flour and seasoning in a separate bowl.  You can find my seasoning recipe on my blog.  Once that is done, pour that over the beef.  Stir to coat meat.

Place the rest of the ingredients and cook on low for 10-12 hours or high for 4-6 hours.

We love chicken, and I love cheese, so this is a no-brainer to throw this together. My kids loved it, and there are many things you can sneak in some yellow squash. You can shred it up and cook it with the peppers. It is tasteless and masks well.

6 Potatoes, cut in french fry style

Seasoning

2 peppers, finely chopped

1/2 onion, finely chopped

2 c. sliced mushrooms

fresh minced garlic

butter

2 c. heavy cream

2 c. white cheese (I used smoked gouda and Havarti)

In a 13×9 greased dish, layer 3 potatoes (french fry style) on the bottom. Sprinkle some seasoning on top. The next layer will be chicken, with a bit of seasoning. In a pan, saute garlic, peppers, onion, and mushrooms until tender.

Spread over the chicken. The next layer will be the remaining potatoes. Sprinkle with seasoning—lastly, the 2 c. of shredded cheese. Pour over the heavy cream.

Cover with aluminum foil (poke holes in the top) and bake at 350 for 1 hr.

Then, you can slap yo mama!

Here is my Cheesy Chicken Lasagna recipe. The recipe is a different spin on regular lasagna. Cheesy Chicken Lasagna is so easy to make. I keep an extra can of evaporated milk if it needs more liquid. Typically, I make more sauce than I realize. I end up needing a smaller dish to make a smaller lasagna. The recipe is something that I wrap well and freeze. Be sure and always label/date your freezer meals. Sadly, I have made that mistake. Then, we end up just guessing what is cooked. We know it has cheese, at least.

Cheesy Chicken Lasagna

3 1/2 c. cooked, shredded chicken

2 – 12 oz. cans of evaporated milk

1 packet ranch mix

Mozzarella

Cheddar

No boil lasagna noodles

Directions

Heat milk, cooked chicken, and a ranch packet in a saucepan. Boil for 3 minutes (stir to prevent burning) and then simmer for 25 minutes.

In a 13×9 greased dish spread a small spoonful on the bottom of the dish: layer noodles, chicken mixture, mozzarella, and cheddar. Continue to layer and end with cheeses. Bake, uncovered, at 350 for 45 minutes. Cover with aluminum and cook for another 15 minutes until cheese is gooey. Let sit for about 5 minutes before serving.

Then, you can slap yo mama 🙂 This recipe is so good and so simple.
