Fantastical Chicken Asparagus Casserole

Fantastical Chicken Asparagus Casserole. This was one of those “made-up” meals. It was so freaking good! I love experimenting. There have been some fantastic creations that have come out of my kitchen. However, there have been some serious stinkers that I’m thankful the chickens will eat! I hate wasting food.

4-6 chicken breasts, boiled and shredded (I used a whole small chicken that I cooked in the crockpot, always saving the broth, of course)

1 bag of real bacon bits

1-2 bunches of fresh asparagus snapped and washed

1 container of fresh mushrooms

Seasoning

Roux

3 T. flour

3 T. butter

Melt in the pan. Remove pan from heat.

Add 1 1/2 c. heavy whipping cream and stir until well mixed.

Return to heat.

Add 1 1/2 c. mozzarella

Fantastical Chicken Asparagus Casserole

In a greased 13×9 pan, layer cooked shredded chicken. Top with asparagus spears. Add mushrooms and bacon bits. Sprinkle with seasoning.

Pour over roux sauce.

Cover and bake at 350 for 30 minutes.

Uncover and cook for 15 minutes.

Enjoy. Fantastical Chicken Asparagus Casserole was a great meal, and I’m so thankful that all my kids either love asparagus or tolerate it beautifully! I could do asparagus with a bit of butter and saute all day long. It is so good and so good for you.

Mozzarella Crust

**This Mozzarella Crust recipe will make the heavens will part and Jesus will ask for a piece.  I will definitely be making this recipe again in the future!**

5 c. mozzarella

5 eggs

1 T. Oregano

1 T. Basil

1 T. Parsley

Mix all together.

Place on greased cookie sheet. Bake at 450 for about 15-20 minutes.

Toppings

You can top this “pizza crust” recipe with anything. Another easy recipe option is to slice it up for cheesy bread to serve with another dish. Dip it in a low/no carb pizza sauce and it is super good. 

This is something I am going to make for a side dish and cut it up as cheese sticks to serve with other meals. I typically use garlic bread, but this is a no-carb alternative that will work just as well.

Mozzarella crust is one of my go-to low-carb hacks. Not only does it satisfy my cravings for pizza or cheesy bread, but it’s also super easy to make and can be customized to fit a variety of tastes. Whether you’re serving it as a side dish or making a full-on pizza, it’s always a crowd-pleaser. I love how the mozzarella crust turns golden and crispy on the outside, while staying soft and chewy inside.

Another thing I love about this recipe is how versatile it is. You can add your favorite herbs and spices, like garlic or crushed red pepper, to give it extra flavor. You can also change up the toppings based on what you have in your fridge. This crust holds up beautifully under all kinds of toppings, so go ahead and get creative with what you add! I’m always amazed at how one simple recipe can be transformed into so many different dishes. Perfect for any occasion!

This brings me SUCH joy. Please know that chicken would be excellent in this, and you can add whatever veggies you like. These are the items I had on hand. Also, this is a freezable recipe.

5 chicken bouillon cubes

Water

8 oz. Velveeta

10 oz. bag of frozen broccoli

1 container of fresh mushrooms or 2 cans of mushrooms

1 can of diced tomatoes

10 oz. fresh spinach (kale would be good too)

1 onion

Seasoning

2 cloves of garlic

I filled my soup pot (or Instant Pot) with water and bouillon cubes. Add the rest of the ingredients and simmer.

Servings: 10

Low-Calorie Cheesy Vegetable Soup can be created with many different types of vegetables. The ones I used were simply the ones that I had on hand. It is such a comfort to me on bad or sad days. I could be full of joy and rapture and still have a cup of broth.

Some people in this world need many things to be comforted. A hug, someone to hold their hand, listen to them talk, or offer up some flowers. Luckily (for Big Daddy), that isn’t my jam. Buy me a bottle of bouillon, hand me a mug from the cabinet, and I am good. If you happen to throw in some good cheese, a purse, and a tattoo, I would be even better!

1 head cabbage (peel off outer layer)

2 cloves garlic

1 Tbsp coconut oil

Seasoning

Directions

Cut cabbage (including core), starting at one end, into 1″ steaks.  Place on a cookie sheet.  Rub with the smashed garlic clove (or you can use minced).

Using a pastry brush, brush with oil and sprinkle with seasoning.  Flip steak with a spatula and do the same on the other side.

Roast at 400 for 30 minutes.  Flip and roast for another 30 minutes.

Healthy eating does not have to be painful, but it can smell horrible, LOL.  Cabbage stinks, no matter what, but eating well with an easy recipe matters.

This is not my cup of tea.  Frankly, I think cooked cabbage smells like butt.  Yet, Big Daddy loves it when I do this for him, so I do it often.  Also, I have found other cabbage (keto-friendly and low carb) that he enjoys.  I’m sure his co-workers are so excited when I make that for his lunches because it makes the office smell so inviting!  LOL.  At least I don’t have to smell it every day.  Cook it once.  Clean up the kitchen immediately.  Pack it in reusable lunch containers and send it on.

Cabbage Steaks are an easy, healthy dish, even if they don’t always have the most pleasant smell while cooking. The simplicity of the recipe makes it a quick go-to when you’re looking to eat something low carb and keto-friendly. While cabbage might not be my favorite vegetable to cook, it’s a hit with Big Daddy. I love that I can roast the cabbage with a bit of garlic and coconut oil, and he enjoys it every time. The crispy edges and tender interior of the cabbage steaks give a satisfying texture, and the seasoning adds great flavor without being overpowering. Although I might not be a fan of the aroma, it’s always worth it to see Big Daddy’s smile when he enjoys his meal. Plus, the leftovers are easy to pack for work and perfect for meal prepping!
