Keto-Friendly Chicken Dish

I was overall pleased with this Keto-Friendly Chicken Dish.  Lately, I’m trying things (some fail, some not), and I post as I make them.  That way, when I look back, I can see what my crew liked and didn’t.

Ingredients

3.5 chicken breasts

Seasoning

Spinach

Italian Seasoning

Fresh Mushrooms

Green onions

1/2 c. olive oil

1 c. chicken broth

Mozzarella

Directions

I had Big Daddy take each chicken breast and slice them thinly.  With 3.5 chicken breasts, it filled 2 greased 13×9 pans.  I seasoned, with my seasoning mix, each side of the chicken.

Then, I added my spinach, Italian seasoning, and fresh mushrooms to my food processor.  I chopped them finely and then spread some over each chicken breast.  Then, I sprinkled Italian seasoning over the top.

Next Up

I put the cream cheese in the microwave for about 30 seconds to soften it.  Then, I added the oil and chicken broth and whisked those together.  Next, I smeared that over each breast and sprinkled the top with the green onions.

Bake at 375, covered, for 20-25 minutes.  Take the cover off, add mozzarella and cook for another 10 minutes.

What I Would Do Different

Next, I will add minced garlic and sauteed onion to the mix.  Overall, this was a good dish; my family gobbled it up guiltless!

Keto-Friendly Cheeseburger Soup

Again, Cheesburger Soup is a staple at my house and very well-loved. The regular version of this soup is loaded with all the good things that make it great. Here is my quest at Keto-Friendly cheeseburger Soup, which was a success!

Ingredients

1# ground beef

1# sausage

1/2 large onion, chopped

2 T butter

minced garlic

seasoning

red pepper flakes

Italian Seasoning mix

Chicken broth

4 heaping tablespoons sour cream

1 c. heavy cream

water

3 c. cheddar

1 head of cauliflower (except next time, I will probably use 2!  chop up it unless you like HUGE chunks.)

8 slices of bacon, chopped

Directions

Get your bacon going in the oven. Once done, chop it up. Remember to save the grease.

In an Instant pot, get butter, minced garlic, and onion, cooking till translucent. Add meat, sausage, and seasoning, and cook till done. Drain, if necessary. Once drained, add Italian seasoning and Red pepper flakes (not too much if you don’t like the heat).

Once done, add in some water and chicken broth. Taste to see if it needs any more seasoning. Chop cauliflower (realize that by using the Instant pot, some of the smaller cauliflower will dissolve, so chop a mix of larger pieces (think potato chunks) and smaller ones so that they will dissolve and create a thicker consistency).

Next Up

Once you get all that in the pot, add enough water and/or chicken broth to cover the meat and cauliflower. Set on the “soup” function, which for me was 10 minutes. Do a quick release.

Add in the heavy cream, sour cream, and cheese. Stir till combined and taste for seasoning purposes or to add more cheese. After all, that, add your chopped bacon.

The soup was delicious. You could not tell that I did not use potatoes or a “cream” type of soup in it.

Fantastical Chicken Asparagus Casserole. This was one of those “made-up” meals. It was so freaking good! I love experimenting. There have been some fantastic creations that have come out of my kitchen. However, there have been some serious stinkers that I’m thankful the chickens will eat! I hate wasting food.

4-6 chicken breasts, boiled and shredded (I used a whole small chicken that I cooked in the crockpot, always saving the broth, of course)

1 bag of real bacon bits

1-2 bunches of fresh asparagus snapped and washed

1 container of fresh mushrooms

Seasoning

Roux

3 T. flour

3 T. butter

Melt in the pan. Remove pan from heat.

Add 1 1/2 c. heavy whipping cream and stir until well mixed.

Return to heat.

Add 1 1/2 c. mozzarella

Seasoning

Fantastical Chicken Asparagus Casserole

In a greased 13×9 pan, layer cooked shredded chicken. Top with asparagus spears. Add mushrooms and bacon bits. Sprinkle with seasoning.

Pour over roux sauce.

Cover and bake at 350 for 30 minutes.

Uncover and cook for 15 minutes.

Enjoy. Fantastical Chicken Asparagus Casserole was a great meal, and I’m so thankful that all my kids either love asparagus or tolerate it beautifully! I could do asparagus with a bit of butter and saute all day long. It is so good and so good for you.

Stuffed Bell Peppers

4 green peppers, cut in half, and core

1 pound lean sausage

Seasoning

Basil

Oregano

Italian Seasoning

Worcestershire Sauce

8 oz. tomato sauce

1 onion

12 slices provolone

1 head of cauliflower

Oil (not a lot, just enough to smear on pepper halves)

Directions

Brown sausage, onion, and seasonings until done.  Drain.

Add tomato sauce and Worcestershire sauce.  Let simmer.

In the meantime, break cabbage apart and run it through your food processor or chop finely.  Add about a cup of the “rice” cauliflower to the mixture.

Heat oven to 350.  Take pepper half and cook (after you have put the oil on it) for about 15 minutes while everything else is simmering.

Take out peppers and layer the bottom of pepper with 1/2 slice of provolone.  Add filling.  Top with an entire piece of provolone on top.

Cook for 30 minutes.

Tidbit

I love these Stuffed Bell Peppers so much that I have also created a delicious soup recipe!  Soup.  I love them, almost all of them.  Well, except the nasty cold ones.  The soup should NEVER be cold.  Like, never in history ever.  Cold cucumber soup?  Uhm, no.  I just don’t get it.  Maybe I have never had a good one, or perhaps they should have never been created.

These stuffed bell peppers are one of my go-to recipes for a cozy, comforting meal that doesn’t leave me feeling weighed down. They’re hearty, flavorful, and so easy to customize. Sometimes I switch out the sausage for ground turkey or even a plant-based crumble when I’m cooking for vegetarian friends. The cauliflower rice keeps things light while still giving that perfect texture. And let’s be honest—cheese makes everything better. That gooey provolone is the real hero here. These reheat beautifully, making them perfect for meal prep or leftovers the next day. Serve with a side salad or roasted veggies and call it dinner!

Cabbage Steaks

1 head cabbage (peel off outer layer)

2 cloves garlic

1 Tbsp coconut oil

Seasoning

Directions

Cut cabbage (including core), starting at one end, into 1″ steaks.  Place on a cookie sheet.  Rub with the smashed garlic clove (or you can use minced).

Using a pastry brush, brush with oil and sprinkle with seasoning.  Flip steak with a spatula and do the same on the other side.

Roast at 400 for 30 minutes.  Flip and roast for another 30 minutes.

Healthy eating does not have to be painful, but it can smell horrible, LOL.  Cabbage stinks, no matter what, but eating well with an easy recipe matters.

This is not my cup of tea.  Frankly, I think cooked cabbage smells like butt.  Yet, Big Daddy loves it when I do this for him, so I do it often.  Also, I have found other cabbage (keto-friendly and low carb) that he enjoys.  I’m sure his co-workers are so excited when I make that for his lunches because it makes the office smell so inviting!  LOL.  At least I don’t have to smell it every day.  Cook it once.  Clean up the kitchen immediately.  Pack it in reusable lunch containers and send it on.

Cabbage Steaks are an easy, healthy dish, even if they don’t always have the most pleasant smell while cooking. The simplicity of the recipe makes it a quick go-to when you’re looking to eat something low carb and keto-friendly. While cabbage might not be my favorite vegetable to cook, it’s a hit with Big Daddy. I love that I can roast the cabbage with a bit of garlic and coconut oil, and he enjoys it every time. The crispy edges and tender interior of the cabbage steaks give a satisfying texture, and the seasoning adds great flavor without being overpowering. Although I might not be a fan of the aroma, it’s always worth it to see Big Daddy’s smile when he enjoys his meal. Plus, the leftovers are easy to pack for work and perfect for meal prepping!
