This is, hands down, the best granola bar recipe I have made in a long time. It is also gluten free and freezable! You can probably tweak this recipe to suit your needs. For one of my children, I would make this without pecans and it would taste just as good!

Ingredients for Gluten Free Granola Bar Recipe

Flax seed

1 c. coconut

8 ozs. mini chocolate chips

6 Tbsp honey

1/2 tsp vanilla

8 Tbsp butter

1 3/4 c. gluten free oats

1 c. oat flour (put a cup of your gluten free oats in a blender and mix well)

3/4 c. brown sugar

1 tsp cinnamon

dash salt

1 1/3 c. chopped pecans

Directions

Mix all together well. I lined a cookie sheet with parchment paper to keep it from sticking. Bake in a preheated oven (325) for 25 minutes but you need to turn it every 5 minutes to keep it cooking evenly.  Get out of the oven and cool. Once cooled, put it in the freezer for about 30 minutes (the entire pan). This step helps you to cut the bars without making a mess.

After that 30 minutes, get it out and cut it into bars. I wrapped each bar in plastic wrap and placed each individual bar into a gallon sized baggie. I did this to help keep their shapes. Also, I pack these in my child’s lunch box and didn’t want to make a mess. I kept mine in the freezer to just keep them fresher longer. There really wasn’t a need for that because we ate them pretty quickly.

These Easy Base Gluten Free Recipes and Seasoning Mix are staples I use at my house. The seasoning mix, I have used for at least nine hundred years. The base recipes are new-ish to me but I have been using them for several months now. You can buy cream of mushroom and cream of chicken soup that is in a can and gluten free. However, they are expensive. You can probably buy the taco mix in a jar and that may be gluten free, but I’m not 100% sure, so I just made my own. It is just easier that way.

Seasoning Mix

1 c. kosher salt

1/2 c. garlic powder

1/2 c. onion powder

1/8 c. pepper

Glass mason jar and the top of a parmesan cheese can.

I place each of the items above in layers in the glass mason jar. From there, I usually have enough room to at least double it. I use this mixture for absolutely everything, so I just layer away. Once the jar is full, screw on the lid and shake to incorporate.

Cream of …. (mushroom, chicken, or celery) Soup

1 c. powdered milk

1 c. rice powder (I tried to make this and it didn’t turn out very well, so I will buy it from now on)

2 Tbsp minced onion

Dash pepper

Dash salt

3 Tbsp chicken bouillon powder

Mix well and place in airtight container. This is the base for the mushroom, chicken, and celery soups.

Cream of Chicken: In pan, combine 4 Tbsp of the base and 1/4 c. water. Add in 1 c. chicken stock and cook stirring constantly.

Cream of Mushroom: In pan, combine 4 Tbsp of the base, 1/4 c. water. Add in 1 c. chicken stock and stir until thick. From there, either add 1 small can of mushrooms or fresh mushrooms.

Cream of Celery: In pan, combine 4 Tbsp of the base, 1/4 c. water. Add in 1 c. chicken stock and stir until thick. From there, add in chopped celery.

Gluten Free Taco Seasoning

2 Tbsp cumin

1 Tbsp onion powder

 Garlic powder, 1 Tbsp

1 Tbsp paprika

1/2 Tbsp chili powder

1 Tbsp oregano

Dash of salt

Depending on what I’m going to store this in, I will double or triple this recipe. Place in an airtight container and season to taste. I rarely measure anything. Remember, start small, taste, and add. You can always add seasoning in but you can’t take it out!

Gluten Free Ranch Mix

Parsley, 1 Tbsp

1  garlic powder

1 Tbsp onion powder

Dash of salt

Dash of pepper

Mix all together (again doubling or tripling depending on what you put it in). 2 Tbsp of this mixture equals one packet.

How to make banana muffins in Instant Vortex Air Fryer. This is not the greatest picture, as I am not a food blogger. What the picture lacks, the muffins themselves make up for. Oh my goodness, this were pretty AND good! I am on the hunt for Xantham Gum to try and make these in a gluten free kind of way. For now, I was just testing out my new Instant Vortex Air Fryer that I got for Christmas!

Ingredients

3 mashed up bananas

1.5 c. all purpose flour

3/4 c. sugar

1 tsp. baking powder

1/2 tsp. salt

1 tsp. baking soda

1 egg

1/3 c. melted butter

Instant Vortex Air Fryer Directions

In a sift, place the all purpose flour, baking soda, baking powder, salt, and sugar. Sift together in a bowl. In a mixing bowl, add in the banana, melted butter, and egg. Mix well. Add, slowly the dry ingredients. Only mix till all the ingredients are wet, you do not want to over mix these. I do not recommend you using your mixer or kitchen aid device.

Preheat the Instant Vortex Air Fryer to 330 and spray your silicone muffin liners with non-stick spray. I filled up 12 cups. Once the air fryer is preheated, place in six of the filled cups. Cook for 10 minutes and then remove. Do the next batch. You can double or triple this recipe as these muffins freeze very well.

Thanksgiving is over and we have some leftover ham. That is how I came up with this Easy Ham and Hashbrown Soup Recipe. There is also a half an onion that needs to be used up, a bit of garlic, a half of a bag of cheese, and some bacon bits. What on earth can I do? That was my thought process yesterday when I made this. I knew I had class for two hours starting at five, so it had to be a crockpot recipe. Also, I have my granddaughter so it was necessary for it to be super quick.

We love potato soup, but frying bacon and cutting potatoes was not on my agenda. I guess it wouldn’t have been on it anyway because I had no bacon and I am out of potatoes. Bart was going to make pizza but then what would the kids eat because there isn’t enough of that to go around. With one child being gluten free, I have to actually think about what I cook now. It can’t just be thrown together. So, here we are with what Bart calls one of the “best soups” he has had in a while.

Ingredients for Ham and Hashbrown Soup

1/2 KY legend ham, chopped

1/2 onion, chopped

1 T. minced garlic

Seasoning

1/2 bag bacon bits

2 T. bacon grease (if you don’t have this, just throw in some butter)

6 cubes of chicken bouillon (if you don’t have this, you can use chicken broth and eliminate the water)

32 oz. water

1/8 c. nutritional yeast (you can omit this if you desire. I use it for nutritional value)

32 oz. shredded hashbrown

1/2 c. sour cream

1 c. heavy cream (I did not have this so I used 2% milk and it worked just fine)

3 T. gluten free flour (you can use any)

Cheese (I used a combo of about 1 1/2 c. colby and about a cup of cheddar)

 

Directions for Easy Soup Recipe

In crockpot, I put in the chopped up ham, onion, seasoning, nutritional yeast, bacon grease, bacon bits, hashbrown, and chicken bouillon powder (or cubes if that is what you have). I mixed this up really well and added 32 oz. water. Pop the lid on and cook on high for about 2 hours. I came back and stirred that around and then put it on low until I was about an hour from eating.

When I was about ready to serve, I took the lid off and added the cheese. While the cheese was melting, I got a measuring cup and put in my milk, sour cream, and flour. I whisked that together to get the lumps out. From there, I poured in the liquid and stirred well. You will start to see it thicken up fairly quickly. I put the lid back on for about 35-40 minutes (low) warm it all back up.

Then it was time to eat!  It really was good. You need to try it to see if you need to adjust the seasoning. Remember, you can add seasoning to a soup but you can’t take it back out. The secret to that is start with a little amount and adjust to taste. I was afraid it was going to be too salty with the ham, bacon grease, nutritional yeast, and seasoning. I thought it could use a bit more but didn’t put it in because it might have just been my tastebuds out of whack.

What I Would Do Differently

Hmmm, I would add some sauteed red, yellow, and orange peppers. I could get away with adding finely shredded zucchini. Fresh mushrooms would have been amazing in this soup as well. There was no cream of type of soup. That is good because it is hard to find gluten free, though it can be made. I just didn’t want to do that because of time constraints. It made a big crockpot full, so we will definitely have it for lunch and the boys will eat it tonight for supper.

This is a super and quick meal that can be thrown together quite easily. Brunzi Baseball Casserole is a favorite around my household.

1 lb. lean ground beef, cooked and drained

1 large onion, cooked

Seasoning

Cream of chicken, 2 cans

Chicken noodle soup, 2 cans (or you could make your own and use it)

2 c. uncooked rice

Brown meat, onion, and seasoning.  Drain.  Add in soups and rice.  Stir.  Bake, uncovered, in a greased 13×9 pan at 350 for 45 minutes.

Additions:

With this recipe, you can add spinach, kale, cheese, chopped-up peppers, or mushrooms; gracious, the world is your oyster. My kids love this recipe. I have been sprinkling a bit of cheese over the top lately, but it isn’t necessary.

With rice there, I choose not to make potatoes or other noodles as a side dish. My kids are happy with a salad and maybe some green beans. We are pretty simple in the side dish department around here. I guess I need to up that game because I know there are ways I can make veggies more fun.

I could make carrot muffins or bread (sugar, I know). There are a thousand and five ways to make zucchini or squash. Anytime I make that, my kids and husband approve. I like doing simple zucchini spears, drizzle some olive oil, seasoning mix, and parmesan. Then, I roast them in the oven until they are fork-tender.

As I searched through my freezer, fridge, and pantry, I came up with this dish. At the end of this post, I’ll share what I plan to do differently next time. This recipe fills a 13×9 dish, ensuring we have leftovers.

Next time, I’ll split the batch—using a smaller glass dish for immediate cooking and an aluminum pan for freezing. By covering it well and storing the extra, I can stock up my freezer. Making a large batch and freezing half allows me to build up meals over time. In my case, I usually do this once a month, giving me enough homemade meals to last an entire month. Cook once, enjoy leftovers, and freeze the rest—you won’t regret it!

Ingredients

Chicken (I had frozen Tyson grilled chicken. You can use canned chicken, cook a whole chicken, or buy a rotisserie chicken or chicken breasts. I sound like the guy off of Forrest Gump describing the different types of shrimp.)

Bacon (bits or fry and crumble)

Seasoning

Garlic butter (I used leftover Papa John’s garlic butter)

Minced garlic

Onion, chopped

Portobello mushrooms, chopped

Two c. sour cream

One can of corn, drained

1/3 c. milk

Bread crumbs

Cheddar

Hashbrowns (I bought the cubed southern hashbrowns that have chopped-up peppers)

Cheesy Ranch Chicken & Hashbrown Bake

Ingredients:

  • 1 bag frozen hashbrowns
  • 1–2 packets dry ranch seasoning mix
  • 4 tbsp garlic butter (or ghee)
  • 1 lb chicken tenders, chopped
  • 2 cups shredded cheddar cheese (divided)
  • ½ cup Italian bread crumbs (or Panko)
  • Salt, pepper, and any additional seasoning of choice
  • Optional: chopped bell peppers, bacon bits or cooked bacon, chopped spinach

Directions:

  1. Preheat & Prepare – Preheat oven to 400°F. Grease a 13×9 baking dish and spread the hashbrowns evenly in the dish. Sprinkle with seasoning and one packet of ranch mix, then toss to coat. Dot with garlic butter or ghee.

  2. Prepare the Chicken – In a large bowl, mix the chopped chicken with another packet of ranch seasoning, a handful of shredded cheddar, and any additional seasonings. Stir until well combined.

  3. Assemble the Dish – Spoon the chicken mixture over the hashbrowns. Sprinkle with Italian bread crumbs (or Panko) and the remaining cheddar cheese.

  4. Bake – Cover tightly with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes until golden and bubbly.

  5. Serve – Enjoy with buttered garlic toast or your favorite side!

Next Time Adjustments:

  • Add larger chunks of chopped bell peppers.
  • Use two packets of ranch seasoning for extra flavor.
  • Try frying bacon instead of using bacon bits and cook the chicken in bacon grease for added depth.
  • Consider adding chopped spinach.
  • The jury is still out on corn—it adds a sweet pop, but the texture is different.

Here’s another easy dinner idea! Chili Cheese Dog Casserole. I love chili, and I love chili cheese dogs—so why not combine them? This dish was a hit with my family, and I served it with chips for a simple, satisfying meal.

Now, let’s talk about life for a second. My downstairs air conditioning isn’t working well, which means it’s hot downstairs. On top of that, my pool still isn’t ready, and depending on others has reminded me that sometimes, we just have to lean on ourselves. So, at one point, our pool was green with frogs, our air was struggling, and my grandbabies and children were definitely riding the struggle bus.

But here’s the good stuff—the upstairs air works, and we had the theater room at the perfect temperature, so we hung out and watched a show. Most of my kids were home for dinner and haircuts. My grandbabies were here, which is a blessing all on its own. And after my husband worked some brain magic, the pool finally started clearing up. Best of all, this recipe came together quickly and in stages, so I didn’t have to turn my kitchen into the depths of hell.


Ingredients:

  • Hotdogs (I used bun-length)
  • Crescent rolls (2 packages)
  • American cheese slices
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Seasoning mix of choice
  • 1 packet chili seasoning mix
  • 2 cans chili beans
  • Shredded cheddar cheese
  • Chips or rice (for serving)

Directions:

  1. Prepare the Hotdogs – Roll out each crescent dough triangle. Place half a slice of American cheese on it, then add a hotdog (I slit mine down the middle so it doesn’t explode). Roll it up and place it in a greased 13×9 baking dish. Bake at 375°F for 10-12 minutes until golden.

  2. Make the Chili – In a skillet, brown the ground beef with diced onion, minced garlic, and seasoning mix. Once fully cooked, drain the grease and return it to the pan. Stir in the chili beans and chili seasoning mix, making sure everything is well combined.

  3. Assemble & Bake – Spoon the chili mixture around the baked hotdogs in the dish. Sprinkle generously with shredded cheddar cheese. Cover with foil and bake until everything is heated through and the cheese is melted.

  4. Serve – Enjoy with chips or rice!


Final Thoughts:

This dish was a hit! The only mistake I made was leaving it uncovered while keeping it warm, which caused the beans to get a little too dry. Since there’s no extra liquid in this recipe, keeping it covered helps maintain the right texture.

Everyone loved it, and my husband specifically requested that it become part of our rotation—even though we don’t really have one! I need to be more diligent about writing down my recipes because there are meals he loves that I completely forget how to make. Shelf-cooking is just second nature to me, and leftovers don’t last long in our house. But maybe, if I start writing everything down, I’ll finally have an actual meal rotation to keep my husband happy. He loves when I remember how to recreate something he enjoyed!

Let’s take a break from the heavy topics and talk about food!

This Chicken Fajita Casserole is not only easy but completely customizable. The recipe fills a 13×9 dish, but you can easily cut it in half if you’re cooking for fewer people. I made a few adjustments along the way, and I’ll share exactly what I used—you can tweak it to fit your preferences!

Now, let’s talk about the real challenge—my husband is not a fan of Mexican food. Well, let me clarify—he’s not a fan when I cook it. Meanwhile, everyone else in my house loves it, so I sneak it in when I can. This week, I focused on shelf-cooking, trying to use up what I already had before restocking. With grocery prices skyrocketing, I’m constantly torn between stocking up and making do with what’s on hand.

Since I already had all the ingredients for this dish, it was the perfect choice. Plus, it comes together quickly! I even made some homemade tortilla chips from leftover tortillas. I simply cut them into triangles, tossed them with oil, chili powder, and sea salt, then baked them at 350°F for about 5 minutes. You could also serve this casserole with store-bought tortilla chips or rice.


Ingredients

Seasoning Blend for Chicken & Veggies

  • 2 1/2 tsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. sea salt
  • 1 tsp. black pepper
  • 1/2 tsp. paprika
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1/4 tsp. oregano
  • 1/4 tsp. red pepper flakes

(Should I admit now that I never measure anything? Ever? I’m spitballing these measurements just for you!)

Chicken Fajita Casserole Ingredients

  • 1 bag frozen chicken fajita strips (thawed & chopped)
  • 1 orange bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 zucchini (sliced)
  • Fresh portobello mushrooms (sliced)
  • 1 small onion (sliced)
  • 2 cloves garlic (minced)
  • 1 stick butter (or oil)
  • 1 block cream cheese
  • 1/2 cup sour cream
  • Shredded cheddar cheese

Step 1: Marinate the Chicken & Veggies

I cut my pre-cooked chicken fajita strips into bite-sized pieces and tossed them into a large bowl. Then, I added the sliced bell peppers, zucchini, mushrooms, onion, and garlic.

Next, I sprinkled the seasoning blend over the top, put the lid on the bowl, and shook it up until everything was well coated. I let it marinate in the fridge for about 30 minutes—next time, I’ll let it sit for at least an hour to really soak up the flavors.


Step 2: Sauté Everything

I heated a cast iron skillet over medium heat, melted 1/2 stick of butter, and added my chicken and veggie mixture. I let it cook slowly, stirring occasionally.

To help tenderize the veggies, I added another 1/2 stick of butter and covered the pan with a cookie sheet. Since the chicken was already pre-cooked, I just focused on getting that perfect sautéed texture for the veggies.


Step 3: Assemble & Bake

  • Preheat the oven to 350°F.
  • Grease a 13×9 baking dish and spread the cooked chicken and veggies evenly across the bottom.
  • In a separate bowl, mix 1/2 cup sour cream with 1 block of cream cheese. Spread this creamy mixture over the top of the chicken and veggies.
  • Sprinkle shredded cheddar cheese on top.
  • Bake for 20 minutes until everything is heated through and the cheese is melted and bubbly.

Let it sit for a couple of minutes before serving—this helps the flavors settle and keeps the juices from running everywhere.


Final Thoughts

This casserole was a hit! Even Bart didn’t complain (too much). It’s packed with flavor, easy to make, and great for using up what’s already in your kitchen.

Spaghetti Carbonara is a simple, satisfying dish that comes together with just a handful of ingredients. It’s the perfect shelf-cooking pasta recipe, using staples I always keep on hand. To round out the meal, I like to serve it with garlic cheese bread and a Caesar salad—quick, easy, and delicious.


Ingredients

  • 1 lb. pasta (I used linguine)
  • Seasoning mix (your favorite blend)
  • 3 room-temperature eggs
  • Bacon (reserve 3 Tbsp. of bacon grease)
  • Fresh mushrooms (sliced)
  • 1 large onion (sliced)
  • 2 cloves garlic (minced)
  • Parmesan cheese (a generous amount)
  • Reserved pasta water (about 2 ladles)

(Want to mix things up? Try adding sautéed bell peppers or spinach for extra flavor!)


Directions

Cook the Bacon & Veggies

  • Cook the bacon until crispy, then remove and crumble.
  • In the same pan, sauté garlic, mushrooms, and onions in the reserved bacon grease until soft. (Spinach would also be a great addition here!) Remove from heat and set aside.

Prepare the Egg Mixture

  • Crack 3 room-temperature eggs into a bowl and lightly beat them.
  • Ladle about 2 scoops of hot, starchy pasta water into the eggs, whisking constantly. This helps temper the eggs, so they don’t scramble when added to the pasta.

Cook the Pasta

  • Boil linguine (or your pasta of choice) in salted water until al dente.
  • Drain the pasta and return it to the pot while it’s still hot.

Bring It All Together

  • Add 3 Tbsp. of reserved bacon grease and the sautéed vegetables to the pasta.
  • Use tongs to toss everything together, evenly coating the noodles.
  • Slowly pour in the egg mixture, continuously tossing the pasta to create a silky sauce.
  • Add lots of Parmesan cheese, stirring until fully incorporated.
  • Finally, mix in the crumbled bacon and serve immediately!

Final Thoughts

This meal was so freaking good and ridiculously easy to make. My family loved it. If you want a vegetarian option, just skip the bacon (though in my house, that’s not happening). I may experiment with turkey bacon next time for a slightly lighter version.

After 30 years of cooking, I’ll admit—some nights, I am just over it. The inspiration runs dry, and I find myself staring at the fridge with zero motivation. That’s why I’ve started writing down my favorite recipes and tweaking them to fit my family’s tastes.

Originally, I found this dish in a Rachael Ray cookbook back when I was obsessed with collecting cookbooks. Now? They just sit on my shelf collecting dust. Maybe it’s time to dust them off and find some new inspiration!

Garlic Parmesan Chops Soup

As promised from yesterday’s post, this is the Garlic Parmesan Chops Soup that is so good! Bart was so impressed, and the pot was instantly all gone! So excited to add a new soup.

Ingredients

Pork Chops (I used boneless)

Seasoning

Bacon grease (or oil)

Butter

Seasoning

Parmesan Sauce

2 c. heavy cream

2 c. parmesan

Garlic

Spinach (chopped)

Fresh mushrooms (chopped)

Onion (chopped)

1/2 tsp. red pepper flakes

Addition

Potatoes washed and cubed (with or without skin)

2 c. cheddar

2 cartons of chicken broth (you can make your own or use water and chicken bouillon cubes)

Cream of Mushroom Soup

How to Make

In an electric skillet, pour some bacon grease (or oil) and butter. I pounded my chops and seasoned them well with my seasoning mix. Fry them up. Once done, remove them from the pan. Again, these were leftovers from last night, so all I did was chop them up into bite-size pieces.

Place all of the parmesan sauce ingredients in the same skillet the chops were in. Stir until thickened. This was, again, leftovers from the night before.

Soup Process

Get your chicken broth boiling, and add some seasoning. Put in your washed, cubed potatoes and let them boil. Once they were done, I scooped them into a bowl, leaving the chicken broth water in the pot.

I added the cream of mushroom soup, parmesan sauce, and cheddar to that pot. I whisked that all into the water to get all the lumps out. Then, I placed the cubed leftover pork chops and let them simmer to warm and soften them up. Once that was done, I added my potatoes back in.

So.  Freaking.  Good.

Here’s another winner that has quickly become a family favorite—Garlic Pork Chops with Parmesan Sauce. This dish was not only easy to make, but it also made a fantastic soup the next day! I absolutely love being able to cook once and enjoy two completely different meals. It’s the perfect way to stretch ingredients and minimize time in the kitchen.

Ingredients:

  • Pork Chops (I used boneless, but any cut will work)
  • Seasoning (your choice—garlic powder, onion powder, salt, and pepper)
  • Bacon grease (or oil of your choice)
  • Butter

For the Parmesan Sauce:

  • 2 cups heavy cream
  • 2 cups parmesan cheese
  • 3-4 cloves of garlic, minced
  • Spinach (chopped, a handful or more to taste)
  • Fresh mushrooms (chopped)
  • Onion (chopped)
  • 1/2 tsp. red pepper flakes (optional, for a little heat)

Instructions:

  1. Cook the Pork Chops:

    • In an electric skillet, add bacon grease (or oil) and butter.
    • Season the pork chops well with your seasoning mix and fry them up until golden brown on each side. Once cooked through, remove them from the skillet and set aside.
  2. Make the Parmesan Sauce:

    • In the same skillet, add the heavy cream, parmesan cheese, garlic, spinach, mushrooms, onion, and red pepper flakes (if using).
    • Stir the ingredients together until the sauce thickens to your desired consistency. If you’d like to keep the chops warm, place them back into the skillet and simmer on low. Alternatively, you can serve the sauce on the side, spooning it over each chop when ready.
  3. Serve and Enjoy:

    • Once the pork chops are cooked and the sauce is ready, plate your chops and pour the parmesan sauce generously over the top.
    • If you want to take it further, double the batch so you have leftovers for a delicious soup the next day!

Chicken Fajitas and Rice

So, I took a lot of leftovers and sad-looking veggies. From there, I made Chicken Fajitas and Rice for dinner. No picture because when I do something new, I think if it sucks, why would I want to document that? Maybe this will be the year I am inspired to let my good and sucky food shine through photos.

Recipe

Chicken (I used boneless, skinless thighs because it is what I had on hand.)

Seasoning

Fajita mix (I used 3 packets)

Red, orange, and yellow peppers

Onion

Garlic

Queso Fresco

Flour Tortillas

2 c. uncooked rice

2 c. water

Teriyaki Sauce

Extra virgin olive oil (any oil is fine)

Preparations

For the rice, I used my instant pot. I placed my 2 c. uncooked rice in, then added a packet of fajita mix, a splash of teriyaki sauce, and my seasoning concoction. Set it and let it go.

I placed my cut-up chicken thighs in a bowl and added fresh garlic, seasoning, a fajita mix packet, and lots of teriyaki. Put the lid on the bowl and shake it up. Placed it in the fridge and let it marinate for at least an hour (overnight or several hours is better, though).

In my electric skillet, I added some extra virgin olive oil. I sliced up a large onion and all my peppers. I sauteed them with some seasoning and a few splashes of teriyaki sauce. Once those were softened, I took them out.

In the same skillet, I cooked my chicken until it was done. Once that was done, I added the veggies and used the other packet of fajita mix. I turned it on low and covered it until the rice was done.

Serve on the rice or wrap up in a tortilla with some queso fresco sprinkled. It was excellent!

Well, my my my, I had no idea my Mexican Lasagna Created From Leftovers would taste so good. A few days ago, I made Philly Cheesesteaks Sandwiches. I had a lot of the meat leftover, which I used instead of ground beef.

Ingredients

Steak um’s (you can use ground beef)

Salt-free garlic and herb seasoning

Seasoning

Creole Seasoning

Orange, yellow, and red peppers, chopped

Fresh garlic

Onion, chopped

Two cans of diced tomatoes

1/3 white queso Velveeta

Can of drained whole kernel corn

Directions

I placed my meat and veggies in the pan and sauteed them. You can add oil, bacon grease, or butter to keep them from sticking. Once that was done, I seasoned it until it tasted like I wanted it to taste.

Next, I added corn and diced tomatoes. My husband doesn’t like tomatoes like that, so I covered my pot and let them stew down. Then, I added the white queso Velveeta. Taste to adjust the seasoning.

Rice

2 c. of water

2 c. of rice

Place on “rice” mode in your instant pot. Let naturally release.

Layering

Put a small amount of sauce in a greased 13×9 dish. Then, place in flour tortillas; next, sauce. Then, rice. Finally, I had some Colby/jack cheese cubes. I broke those over the rice and added a bit of cheddar. Repeat layers ending with cheese.

Bake at 350 for 40 minutes. Let sit for 10 minutes and serve.

Ingredients

  • 1 cup salted butter, softened
  • 1 cup white sugar
  • 1 cup light brown sugar, packed
  • 2 tsps. vanilla
  • 2 eggs
  • 3 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. sea salt (can use kosher or regular salt)
  • 2 cups chocolate chips (we use the mini, but any will do)

Instructions

  1. Preheat the oven to 375°F. Line a cookie sheet with parchment paper or spray with nonstick spray.
  2. Mix the flour, baking soda, salt, and baking powder in a separate bowl. Set aside.
  3. Cream together the butter and sugars until combined. Beat in the eggs and vanilla until fluffy.
  4. Gradually mix in the dry ingredients until fully incorporated. Add the chocolate chips and stir until well combined.

Rolling, Rolling, Rolling
5. Roll 2-3 Tbsp of dough at a time into balls and place them evenly spaced on your prepared cookie sheets. You can also use a small cookie scoop.
6. Bake in the preheated oven for approximately 8-10 minutes.
7. Take them out when they are just barely starting to turn brown. Remember, the bottoms will brown quicker than the tops.

Pro Tip:
You could slather your naked body with the dough—just a thought because the dough is fantastic. If you prefer your cookies crispier, feel free to bake them a little longer. My father-in-law loved his cookies a bit on the burnt side. These cookies always remind me of the Soft Batch Cookies from back in the day!

Oh my, is this Cinnamon Roll Cake the best thing ever. I hope you find it as good as my family does. It is so easy to make. This cake is good hot or the next day. It usually doesn’t last too long after that, at my house.

My parents are coming over for dinner and have chosen the menu. I’m unnaturally excited about them coming for no reason. Typically, when they come to my house, it is either a celebration or a crisis. This time is neither.

Technically, Thursdays are reserved for pizza night, but I am gladly rescheduling that for Friday night. I’m thankful that my parents can still get up and go whenever they want. It is a blessing.

I love cinnamon rolls probably more than my waistline does. We do not make this often, but tonight was a special occasion.

Cake

3 cups all-purpose flour

1 1/2 cups milk

2 eggs

4 tsps. vanilla

4 tsps. baking powder

1 stick butter, melted

Directions

Place ingredients in a bowl and mix well. Pour into a 13×9 greased dish.

Next Up

1 cup brown sugar

1 T. Cinnamon

3/4 cup melted butter

Directions

Mix in a small bowl and pour over top of the cake.

Bake at 350 for 30 minutes.

Icing

3 c. powdered sugar (for those who might not know, the symbol XXX is for powdered sugar as well).

1 1/2 tsp. vanilla

5-8 tsps milk (you want it thin enough to pour quickly)

Directions

Allow sitting for 10 minutes. Pour over hot cake. If you get wild, poke some holes in the cake and let that yumminess seep into it.

THEN EAT!

I will write down what I did in this Pizza Spaghetti Bake because it was good! Yet, I will also write what I will add/do differently. I feel like all recipes need to be tweaked in some form or fashion, so this is pretty typical.

Ingredients

Beef

Onion

Minced Garlic

Pepperoni, chopped (and some whole for the top)

Next time, do a pound of beef and a pound of sausage.

Seasoning

Italian Seasoning

Rosemary

2 packets of spaghetti mix

1 jar of spaghetti sauce

Next time, I will add a jar of pizza sauce.

2 cans of mushrooms, drained

Chopped spinach

Panko

Parmesan

Cottage Cheese

1 egg

Mozzarella

Penne Noodles

Directions

Boil noodles and drain according to directions.

Cook beef, chopped pepperoni, onion, garlic, and seasoning (sausage if used) and drain. Put back in the pot. Next, add mushrooms and chopped spinach. Then, add the Italian seasoning, Rosemary, and spaghetti packets. Mix well.

Next up, add the spaghetti sauce (and about a quarter of that same jar, put some water to add). If you are also using pizza sauce, add it. Mix well. Add in some panko, parmesan, a couple of handfuls of mozzarella, cottage cheese, and the egg. Stir and keep warm until your noodles are done.

Finally, mix the meat mixture with the noodles and spread it in a greased 13×9 dish. Top with mozzarella and whole pepperoni—Bake at 350 for about 40 minutes.

Just go ahead and slap your mama. Dang, it. This Chicken Alfredo Soup is now tied for first place for Big Daddy. The other two are Easy White Chicken Chili with Cream Cheese and Pizza Soup Recipe. Frankly, I am impressed with myself.

Ingredients

3 cans of chicken, drained (feel free to use chicken breasts because you can use the broth)

Seasoning

Onion

Garlic

3/4 c. butter

3/4 c. flour

1 c. heavy cream

Sour Cream

Chicken bouillon

Water

Parmesan

Mozzarella

Pasta

Directions

Saute up the cut-up onion and garlic in butter. Once sauteed, add in your flour and cook that down a bit. Get your whisk out and add 2 c. water. Whisk that all in really well. Now, I wish I could tell you how much chicken bouillon I used, but I used that paste. I think I did about 2 Tbsps. Sprinkle with your seasoning.

Once that is incorporated, add more water and keep stirring. I did this in my Instant Pot on saute mode, by the way. You will notice your “roux” is getting thicker. I think I did about 5 c. water. You can adjust accordingly. Add your chicken and parmesan.

Moving On

Let’s talk pasta real quick. I used bowtie pasta. I brought my water to a boil in my pot (not the instant pot). Once it came to a boil, I seasoned it and added my pasta. Drain and then add to your roux.

Next time, I might use a couple of boxes of Ditalini pasta or maybe cut up fettucini. The bowties were fine and good, but I think I want a smaller type, like a small rigatoni. Ugh, I need to go and look at all the types or make my own. Do you know what would be good? Putting in cheese tortellini. Cause, yum!

Anyway

Once I got all that in the pot, I added the heavy and sour cream. If you cook this in an instant pot, you must keep stirring because it will start to burn on the bottom. Baby it! In the end, I added about 2 cups (I know, I know) of mozzarella. Keep tasting to adjust the seasoning. Remember, you can always add seasoning, but you can’t take it out if you put too much in there. Start small and add as you like!

Dang, this was good. Had my Oak been here, I would’ve slapped her face 🙂 Then, she would have slapped me back, LOL.

Is it a secret that I love soup? I don’t believe it is. So, without further ado, here is my Pizza Soup Recipe. It’s a keeper! Bart says it is tied for first for his favorite soups. The other is White Chicken Chili. I did this all in the Instant Pot, but you can do it on the stovetop!

Ingredients

2# sausage

2# ground beef

Pepperoni

You Can add any meat you want here or combine your favorite meat toppings in this soup. Also, if you like a lot of veggies on your pizza, chop them up and add them here because you want to cook them down a bit. I want to use peppers, but my husband doesn’t care. Mushrooms would be good!

1 onion

Minced Garlic

Seasoning

Italian Seasoning

Rosemary

1 jar of pizza sauce

Water (I believe I filled up the pizza sauce jar 3x and put it in there. Eyeball it.)

2 cans of Tomato Soup

1 can of cream of mushroom soup

Mozzarella

Directions

On the saute mode (Instant Pot), combine the meats, onion, minced garlic, and seasoning. Cook until done, and drain if you need to. Once done, put it back in the pot and add your Italian Seasoning and Rosemary.

Next, add the sauce, water, and soups. Stir well and then place the lid on, seal, manual, for about 8-10 minutes. Everything is cooked, so you want to meld the flavors. Once done, use the quick release. Stir in your mozzarella. Again, put as much in there as you wish. I may have used 2 cups cause we like cheese!

Enjoy!

Oh, my original plan was to add a box of Ditalini noodles to it. I would have boiled them in saltwater on the stovetop. Then drained it and then added it to the instant pot. I have found that if I cook noodles that small in the IP, they get mushy.

Shelf-Cooking Co-Vid19 Style. With Co-Vid19 rearing its ugly head, I have not been out of the house. I lied. Twice. I have been out twice. Both of these times have been to take H to treatment in Nashville. So, grocery shopping is through pick-up, when my son works (at a grocery store) or my husband picks it up. Also, the school has been bringing food, for the week, for three kids. That helps tremendously.

Yet

There are some things my kids will not eat by themselves. Now, they are not picky eaters, but they prefer it to be cooked in something. So, I’ve been separating the breakfast foods, lunch foods, snacks, and fruit. They eat all the breakfast stuff throughout the week. Also, they eat most of the lunch food throughout the week. Yet, there are things like raw broccoli and cherry tomatoes that they will not eat unless I use them another way.

I do not waste food.

Plain and simple. I am not a short-order cook and do not throw things away. That is how I was raised, and that is how I raise my kids. With all that being said, I stockpile the carrots. For one, my kids do eat those. Secondly, I can cut those suckers and put them in any casserole. Thirdly, carrot bread or carrot cake. Yes, please. Fourthly, soup. Put them in any soup. Fifthly (I’m starting to giggle now because what do I do when I get up to tenthly? Is that even a word?), put them in a saute pan with some butter and brown sugar. It’s a good thing.

Next up, cherry tomatoes. Once I have a baggie, I give them to one of my older daughters, who both love them. Also, I juice them for chili or soup. I chop them up and saute them in any pasta dish. You can do a multitude of things with those things.

Now, onto this recipe and broccoli. My big girls love raw broccoli. Sadly, my other five kids do not. My son-in-law calls them “the trees of the devil.” He is a bit extra. You can make broccoli soup or Chicken and Broccoli Braid. Also, you can use it to make beef and broccoli stir fry—lots of things.

Odds and Ends

Today, however, I had a 1/2 bag of many things. N had brought home some leftover hamburgers and cooked bacon from work. I had a couple of bags of this and a bag of that. Then there was a 1/2 a bag of another thing. I put all those together, and I made 2 casseroles. Honestly, I didn’t think it would make that much. I’m cooking one casserole for tonight and freezing the other for another night. We also have leftover breadsticks from the pizza we ordered last night, so that is a side dish. I think I have a couple of cans of corn. Voila. Dinner is served.

Two # ground beef

onion

garlic

seasoning mix

Worcestershire sauce

Brown all of this together, drain if needed.

In a 13×9 dish, grease it (preheat the oven to 350). On the bottom of the dish, place the meat mixture.

Step 2

Now, this is what I had on hand. Tweak this to what you have. Just have fun with it. If it sucks, you will remember what not to add!

2 c. chopped fresh spinach

carton of fresh mushrooms, chopped

fresh broccoli, chopped

cooked bacon, chopped

Cheddar cheese

Layer each of these components on your meat mixture.

Step 3

In a bowl, add 2 cans of cream of mushroom (can use chicken or celery) and 16 oz sour cream. Once combined, spread over casserole.

Next up, add cheddar cheese (any cheese will do, this is what I had).

Lastly, I had a 1/2 bag of leftover tater tots. I lined them on top. I wanted to get rid of the bag, mainly because I had no potatoes to cook up.

Bake at 350 for about 40 minutes, cover, and uncover for another 12 minutes until your tater tots are done. Now, I did not pre-blanch or steamed my broccoli. I was afraid it would get mushy.

On freezing this dish, I did not cook it first…again, the broccoli issue.

Other Options

Now, you can change up your cheese. Also, you can add in zucchini, squash, cauliflower, or carrots. You can change up your soups. Instead of tater tots, use instant or regular mashed potatoes to put on top. If you don’t want to do that, add egg noodles or rice at the bottom of the dish. The sky is the limit.
